Pascal Sanchez is a Michelin-starred French chef, with more than 30 years experience working in and managing an international roster of kitchens in France, Switzerland, the United Kingdom and the United States.

An industry veteran, Chef Sanchez’s mastery of gourmet French cuisine has landed him leading roles in some of the world’s most prestigious kitchens. Most recently, he was the executive chef of French bistro La Goulue in Palm Beach.

For 16 years, Chef Sanchez served as executive chef and chef de cuisine for several, award-winning concepts from world-renowned, Michelin-starred French chef Pierre Gagnaire. During this time, he led gastronomic efforts at Pierre Gagnaire in Paris and Sketch in London — each a recipient of three Michelin Stars — as well as Twist in Las Vegas, which achieved the Forbes Travel Guide Five-Star Rating in 2012. In 2010, Chef Sanchez was named Las Vegas Best Chef of the Year for his work at Twist.

As chef and owner of MIA in Montpellier, France, Chef Sanchez was awarded a Bib Gourmand by the Michelin Guide in 2013 and his restaurant was awarded one Michelin Star in 2015.

Chef Sanchez is passionate about presenting a premier culinary product by way of a short, dynamic menu that constantly evolves. He approaches his craft by considering the menu as a blank page, ripe to showcase the terroir and local producers.
